Do I need to pay for the trip in full at the time of booking?

It depends if your booking date and date of departure are close,if so you will need to pay in full. But if you are planning your trip months and or years in advance you can pay a non refundable deposit to lock in the rate quoted and pay on the trip up until the final payment date.
